My kitchen was a mess this weekend! Berry Messy. (Ugh. Please don’t let me say something like that again.) I saw a donut breakfast skewer on Pinterest and I thought that was such an easy way for kids to make their mom breakfast for Mother’s Day (or any day for that matter). So I went to make my own just to show you how fun and easy breakfast skewers are… and then the juices started flowing and I ended up making 4 different breakfasts, all of which are easy and healthy(ish).
Donut Breakfast Skewer
The aforementioned Donut Breakfast Skewer. All you need is Donut holes, berries of your choice, and some skewers. Blackberries and strawberries just happened to be on sale. Stick the berries and doughnuts on a skewer, alternating the berries and doughnuts to make a bright, colorful pattern.
Breakfast Banana Split
A very healthy way to start off Mother’s day, because lets face it, Mother’s day had better include a big dessert too, so you’ll be wanting to save room for later. To make this, cut a banana lengthwise down the middle. Lay the slices cut side up on a plate. Dollop vanilla yogurt down the center. (My recommendation for vanilla yogurt is Tillamock. It almost tastes like ice cream!) The banana I used was particularly long so I ended up using three big spoonfuls of yogurt. Add some berries on top of the yogurt and some almond slices or granola to add some crunch. Nothing has to be perfect here. My co-pilot said he would eat this any day and my son gave it two thumbs way up.
- 1 large banana
- 3 large dollops of vanilla yogurt
- 1 cup mixed berries (I used blackberries, blueberries, raspberries, and strawberries.)
- slivered almonds and/or granola (optional)
- Cut the banana in half, lengthwise. Lay on a plate.
- Dollop the vanilla yogurt down the middle of the banana.
- Top with berries and granola.
And since we’re talking yogurt and berries, the next breakfast concoction was a breakfast parfait. Layer granola, yogurt, and berries until your glass is full. Add some almonds too if that’s your style.
We had a mountain of leftover donut holes so we created a breakfast trifle. It seemed only natural after making a parfait. The trifle is the parfaits fraternal twin. Break up the donuts holes and place a layer in the bottom of the jar. Then add a layer of yogurt and a layer berries. Repeat until your jar is full.
There you have it. Four ways to start your (Mother’s) Day with berries, yogurt and donuts. You can chose healthy, or healthy with a mix of donuts. Either way with all those berries, you should be eating guilt free.
